Traditional Spanish cuisine in the heart of Madrid
Restaurant in Cava Baja
Madrid cannot be understood without Cava Baja. A street that wasn’t built for strolling, but to protect the King. In this area there were old “cavas”: tunnels that connected to the Royal Palace, created as escape routes. That’s why Cava Alta and Cava Baja follow one after the other.
La Cava de Illán, in the heart of La Latina, next to the lively Cava Baja, has been cooking up the flavors of all of Spain since 1988, using fresh produce and recipes passed down through generations. Here you’ll find authentic traditional Spanish cuisine: home-style dishes, fresh seafood, fish prepared in the classic way, and a carefully curated wine cellar featuring wines from every corner of the country.
We’re one of those Madrid restaurants where traditional food isn’t just a trendy label—it’s what we’ve been doing for almost four decades. Come for tapas, a leisurely family meal, or to celebrate whatever’s on offer..

New Restaurant in Plaza Paja
Because you’ve asked for more than we could give. Reservations for 15, 20, 35 people that, due to space limitations, we often couldn’t accommodate as you deserve..
So we’ve opened a new location, a four-minute walk from our usual one, in Plaza de la Paja, 3.
Where We Are
